Abstract

Jasmine (Jasminum spp.) is a valuable flower crop grown widely in tropical and subtropical regions for its cultural, ornamental and industrial importance. However, its high perishability, rapid aging and loss of fragrance create significant challenges for post-harvest handling, marketability and export potential. This review brings together current knowledge on the post-harvest biology of jasmine flowers. It focuses on key biochemical changes, including membrane damage, oxidative stress, enzymatic browning and the timing of the pathways that produce fragrance. The effectiveness of various methods, such as pre-cooling, cold storage, modified atmosphere packaging (MAP), controlled atmosphere storage (CA), chemical preservatives, natural anti-aging agents and biodegradable coatings, is critically assessed for their ability to keep flowers fresh, colourful, firm and aromatic. Emerging green extraction technologies, such as supercritical CO₂ extraction, ultrasound-assisted extraction and microwave-assisted extraction (MAE), are explored in relation to value addition in perfumery, cosmetics, hair oils, teas and functional foods. Supply chain challenges include inadequate cold chain infrastructure, inconsistent grading and price volatility. Post-harvest losses of 15–35 % of gross production are common across producing regions, underscoring the economic urgency of improved handling and cold-chain infrastructure. Lastly, this review identifies key research gaps in post-harvest storage, molecular regulation of senescence, sustainable processing and artificial intelligence (AI)-assisted quality assessment. By integrating current advances in post-harvest physiology, green extraction technologies and value addition, it provides a comprehensive framework and outlines future research priorities for enhancing the jasmine value chain. Future directions are suggested to strengthen jasmine value chains from harvest to value addition.
